Green Pea Cream

½ LB Fresh Green Peas
½ Teaspoon Salt
1/8 Teaspoon Ground White Pepper
2 Oz Unsalted Butter
1 Teaspoon Extra Virgin Olive Oil
1 Teaspoon Fresh Chives
¼ Cup Fresh Cream

1 In a saucepan cook the butter with chives and oil 1 to 2 minutes then stir in peas and add 1 cup of water,salt and pepper.Heat to boiling and after reduce heat.
2 Simmer uncovered 30 to 35 minutes,stirring occasionally
3 Add the fresh cream,cook 5 minutes
4 Blend with a blender and serve
