ITALIAN SEASONING RUB
1 tablespoon fennel seed ,crushed
1 tablespoon Italian seasoning
1 teaspoon salt
1 teaspoon black pepper
1 clove garlic finely chopped
1 pork shoulder roast ( 3 lb )
1 medium white onion ,cut into quarters
½ lb carrots ,cut into quarters
2 oz celery ,cut into quarters
5 teaspoons extra virgin olive oil
1 cup of red wine
2 Mango medium size peeled and chopped
1 cup fresh cream
1 teaspoon fresh chives
1 teaspoon fresh dill
1 teaspoon fresh tarragon
1 Heat oven to 335 ° F.IN a small bowl,mix all seasoning rub ingredients .Brush 2 teaspoons of the oil over the pork .Rub 2 teaspoons the seasoning rub over all surfaces of pork.
2 Place pork in shallow roasting pan ,add the onion,carrots,celery,2 teaspoons of oil and mix .
3 Roast uncovered ,after 2 hours brush 1 cup of wine and cook another hour,after is ready to serve.
4 Blend mango with fresh cream and herbs for 3 min.
Cut the cooked pork into slices and serve with the mango sauce.
