Caribbean Style Lobster Salad

2 Servings
1 uncooked fresh lobster
3 tablespoons coconut oil
1 medium red onion, chopped
2 teaspoons fresh chives
1 clove garlic ,finely chopped
2 oz Sweet Dominica Seasonal Peppers finely chopped
1 medium Julie Mango roughly cut
ΒΌ teaspoon salt
1/8 teaspoon white pepper
2 tablespoons fresh lime juice
2 leaves iceberg salad to decorate the salad and to be used as a serving bowl

1 Wash the lobster
2 Boil it for 12 min, after boiled , drain it . Cut it in half and remove meat. Roughly cut and flavor with the coconut oil.
3 In a bowl, mix all ingredients and leave to flavor 10 min then add the lobster,mix everything together ,flavor 4/6 min and is ready to serve in iceberg leaves.
